The Aprocassi cooperative is based in the provinces of San Ignacio and Jaén, in the Cajamarca department of Peru, a region recognized for its exceptional high-altitude specialty coffees.

Currently representing 600 active members, Aprocassi operates across a broad elevation range where coffee is cultivated on small family farms at altitudes between 1,000 and 2,500 meters above sea level. The diverse microclimates and rich soils of Cajamarca create ideal conditions for developing complex, nuanced cup profiles.

The cooperative maintains a strong commitment to both social impact and environmental sustainability through innovative programming. Their Apromiel initiative, developed in partnership with NGO Rikolto, empowers women coffee growers by training them in beekeeping practices. This complementary business opportunity helps diversify farm income while supporting pollinator populations that benefit coffee cultivation. Women receive comprehensive business management training alongside technical beekeeping skills, contributing to more resilient and economically diverse farming operations.

Aprocassi has also pioneered the "Huella Ambiental" (Environmental Footprint) project—a pilot program involving 51 member families designed to analyze the complete life cycle of coffee production from farm to port shipment. The goal is to identify opportunities to reduce carbon emissions and transform agricultural practices toward carbon neutrality, demonstrating the cooperative's forward-thinking approach to climate responsibility.

Producers cultivate traditional varieties including Catimor, Caturra, Typica, Pache, and Bourbon. Coffee is grown under shade canopies, fully washed, and sun-dried on patios, ensuring clean processing and consistent quality development.

With Fair Trade Organic certification, Aprocassi ensures equitable pricing for farmers while maintaining environmental standards that protect the long-term health of the land and water systems essential to coffee cultivation.
